Grape sorting: Very careful sorting on arrival at the chai to only keep the healthiest grapes at peak ripeness.

Vinification : Traditional, with partial destemming, temperature control and punching the cap down.

Vatting : 8 to 12 days

Maturing : In vats and barrels for 8 months
