Gougeres and Champagne Thiénot

If you haven’t tried them before, gougères are wonderful fluffy, cheesy choux pastries that you serve as appetisers. It takes a few goes to master them, but totally worth the effort. They need to be airy, light and deliciously cheesy. Gruyere is the best cheese to use for making them. Aim to make them small rather than big, which can be heavy. You’ll eat more of them if they are smaller!

How would we serve them? With a white Burgundy, but we prefer them with Champagne Thiénot
