“I will be going home to Estonia for Christmas. The big celebrations are on the 24th of December, but we still have a nice Christmas lunch on the 25th. We usually have smoked fish, gravilax and pork on the 24th.
If I have hold luggage, I’ll sneak in a bottle or 2 of Riesling by Domaine Trapet. It has such good acidity and minerality throughout and together with the sharp citrusy and lime-peel flavours, it works well with the gravilax. I will also pair with Chablis Domaine du Chardonnay, which I can find in Estonia. We are big fans in my house!!”
