Established in Morey-Saint-Denis, the Amiot Family has worked in vines and wines for over ten generations. Grandfather Pierre established the Domaine’s identity by creating the first label in 1976. His son, Jean-Louis, was the artisan of recognition for the Domaine from the 1980s. His wife, Chantal, came to support him in 2012. Today, their son Léon wishes to perpetuate the family tradition: the three roses that appear on the label recall the motto “Sans varier” of the Counts of Vergy, carrying on “without changing” to express the excellence of their terroirs.

The Domaine extends over 5 hectares from Gevrey-Chambertin as far as Chambolle-Musigny.
« Combottes » signifies little coombes or valleys. Around 1930, it appears a grand cru appellation as « Combottes-Chambertin » was claimed for it, but a judgment in 1931 banned the addition of the term « Chambertin,» the climat not being adjoined to the latter.

The vines, particularly well exposed to the morning sun (east, southeast), always produce ripe grapes. Situated at 260 m elevation, they sit on limestone soils modified and decomposed by gravelly hillside colluvium. Les Combottes are located at the limit of Gevrey-Chambertin and Morey-Saint-Denis, between the Grand Crus Latricières-Chambertin, Mazoyères-Chambertin, and Clos de la Roche.

This is one of the domain’s oldest parcels of vines, which we try to maintain thanks to massal selection. From vine growing through to vinification, each process is balanced as a function of the vintage to highlight the typicity of this terroir. Ageing is in oak barrels with one-third of new oak for this appellation.


Hints of crushed leaf and fennel can be found on the calm and almost timid aromas of red and blue pinot fruit. As one would expect, the mouthfeel of the medium weight flavors is wonderfully refined thanks to the even finer tannins that shape the youthfully austere finale that isn’t quite as persistent as that of the Millandes.
