With his Viticulture Diploma safely tucked in his pocket, Denis embarks upon a ‘round the world’ winemaking adventure before taking over the family Domain in Fuisse. After successfully converting the property to organic standards/status, in 2006 he decides to start up his own Domain, starting with only one modest hectare of vineyard in Vire-Clessé. Today Denis has been established as one of the most exciting winemaker in the Maconnais. His wines follow the principles of biodynamic, manual & horse ploughing and now with a brand-newly-built winery at his disposal, Denis’ wines are some of the mostly acclaimed in the Pouilly-Fuisse appellation.
Vineyard & Vinification Note
Rooted in the village of Pouilly, these fifty-five-year-old vines benefit from an Eastern exposure. Mostly on clay soils, the wines reveal rich aromas and salty notes.
Vines: 55 years old
Soil: clay & limestone
Exposure: East and South-East
Harvest: by hand in 20kg crates, whole bunch pressing
Vinification and ageing: indigenous yeasts in new, 1, 2,3 and 4 years old barrels
The nose is pure, elegant, quite subdued to begin with and has hints of butter and lemon fruits. The palate is subtle, elegant but then develops in a persistent, structured wine with aromas of wild honey, yellow fruits, white flowers and finishes with an amazing, almost salty, mineral, and wonderfully delicate aftertaste.
