Description

Jean-Maurice Raffault was one of Chinon’s great personalities. Upon taking over the family Domaine in 1973, he revolutionised local practices and established new practices widely emulated in the region. Beginning with only the 4.5 hectares he inherited from his father Maurice, Jean-Maurice purchased and planted some of the finest known sites of Chinon. Rodolphe Raffault succeeded his father as winemaker and manager in 1997. Drawing on his experience in Burgundy, Rodolphe initiated the practice, for this top cuvées, of carrying out the wine’s malolactic fermentation in 100% new barrels.  This practice, rare in Chinon, produces dramatically expressive and pure wines.

Vineyard data: 10 hectares near the Vienne River, in the communes of Avoine and Savigny en Veron. Age of vines: 25 years average

Harvest: Late September/Early October

Vinification and Ageing:

100% de-stemming. Spontaneous fermentation with natural yeasts. 2-week maceration period with daily pumping over of the liquid over the cap of grape skins for the first seven days of the vatting period, diminished to once every two days towards the end, to obtain a supple texture.

Ageing on the lees in stainless steel tanks until bottling in the early Spring.

This origin gives a supple, fruity Chinon that is perfect for early drinking. A supple dark berry/cherry fruit note follows the expressive bouquet of dark berries and violets. The wine’s fresh and bright flavours are best appreciated slightly chilled.

Food Pairing

Beautiful slightly chilled as a summer aperitif and partners well with fish and roasted meat. It is also perfect for many vegetarian dishes like risotto and little stuffed tomatoes. Great with goats’ cheese.
