Inspired by his vinous experiences in Bordeaux, Dimitri Glipa decided to settle in the Fenouillèdes in 2006. He works his magic particularly with Grenache Gris and Noir, as well as Syrah and Carignan. Purity, intensity and complexity abound in the stylish wines, coming from Dimitri’s 10 hectare estate, where his ‘vieilles vignes’ have an average age of 60.

Soil and terroir: Plot selections on the terroirs of St Paul de Fenouillet at an altitude of 250 m on schistose marls and Tautavel “Cru Maury” soil with clay-limestone
Vineyard: Vines aged between 15 and 35 years
Density: Syrah: 4 000 plants/ha – Carignan: 4 400 plants/ha
Grenache Noir :4 400 plants/ha
Training method: Goblet pruning for Grenache and Carignan Noir -Single Guyot for Syrah – Sustainable viticulture
Yield: 30hl/ha – 20,000 bottles produced
Harvest and vinification: Grape harvested in a 300kg pallet box; grapes sorted on spot if necessary. Berries sorted on sorting table after destemming

– Temperature control by thermoregulation
-Work focused on fractional pumping over, depending on the tastings
-Maceration from 10 to 15 days depending on the selections
– Ageing 5 to 6 months in stainless steel vats
Tasting Note
Beautiful garnet colour. The nose is fruity and fresh. The palate is round, beautifully aromatic with gorgeous silky tannins and a fruity finish.

Great pairing to tapas, charcuterie board and also white and red meat.
