In the Venetian hinterland just north west of Venice, at the heart of the classic DOCG Prosecco land, in the most sought-after areas of Collalbrigo, Refrontolo and Feletto where, according to Bonifacio, local wines between the 16th and 17th century were called “precious” because of their exceptionally high quality, lies the ColSaliz wine farm. The hill’s name apparently comes from its characteristic sandy soil, called “saliz” in the local dialect, conferring special features to the area’s Glera grapes. The wine farm, owned by Antonio Faganello, is well equipped with modern facilities but relies on old traditional wine making techniques handed over from father to son since way back in 1889. Its land includes 15 hectares of vineyards in Refrontolo, with a favourable west and south-west exposure, at 200-300 m. altitude.
Vineyard & Vinification Note
The “silvoz” and “cappuccina” cultivation methods, together with a suitable vine density and drastic cut in fertilizers, ensure an excellent quality for the Glera grapes, thanks also to a substantially reduced yield. All the wines are obtained from the farm’s own Glera grapes in up to date vinification facilities: soft grapes pressing and must fermentation in temperature-controlled vessels are followed by the autoclave “presa di spuma” step to get optimum perlage
It is produced from grapes coming from particular areas in Colli Trevigiani, where aromaticity and acidity are able to give a remarkable and intense taste energy to this sparkling wine. It is obtained by wine-making reduction, thus keeping whole and intact all the scents, the fragrance and the typicity of this great grape blend that has always delighted our palates in this historic family quality. Because of its versatility it may be consumed on any occasion during the day, especially as an aperitif. Serve it at temperatures from 2°C to 8°C.
